Methods of processing taro into flour and Other food products by means of small-scale commercial equipment were investigated., It was found that taro flour could be substituted for 15 to 20 per cent. of wheat flour in a wide variety of baked goods. Complete analytical data are given for 2 wetland and 2 upland varieties of taro. Recipes for the utilization of taro flour are appended.
